Il CABERNET SAUVIGNON
The first official mention appears with the name of "Petit Cabernet".
Where was it born?
The name " Cabernet Sauvignon " appears for the first time in 1840 .
Native to the Bordeaux area, a land that also gave birth to the famous Merlot.
A centenary and rich history, but its identity was discovered in the late 1900s by Carole Meredith, geneticist and professor at the department of viticulture and enology in California.
Typed his DNA he discovered the origins that saw him the son of Cabernet Franc and Sauvignon Blanc, which occurred in some mysterious place in Gironde (The name of the department derives from the name of the river estuary of the watercourse formed by the Dordogne and Garonne rivers , which flow downstream from Bordeaux).
What are its characteristics?
It is a late grape variety well adaptable on different soils but prefers those pebbly, gravelly and well-drained .
Very strong and resistant to different climatic conditions, it allows to obtain interesting and characteristic wines on different terroirs and different exposures.
The size of the bunches and the grape itself are very small with a characteristic blue color.
On short fermentations with limited contact times, fine and ready-to-drink wines are obtained, while if we want to obtain long-lived wines, rich in color and tannins, we can opt for longer macerations and important refinements, having to do with a grape rich in components polyphenolic and undoubtedly suitable for producing long-lived wines.
We must be very careful about the harvesting period, as the relationship with Sauvignon Blanc can be expressed in early collections with notes of pepper, olive and tomato leaves that are a little pushed and marked.
When fully ripe it offers flavors of berries, plum plum, graphite, tobacco, black pepper and cinchona with sometimes balsamic hints.
Taste supported by structure, with extract and tannin that we are going to balance at best with an important alcoholic streak.
In the purities, waiting is a must and it becomes pleasant to welcome the evolution of the vintage with the passage of time.
We can find it planted all over the planet wine, with the twelfth place in Italy, the main country at the ampelographic level.
Obviously present in France, immediately after Merlot, Grenache and Sirah has carved out a large space in Bulgaria and Lebanon not to mention Ukraine, Austria, Hungary, Switzerland and California where it is the most cultivated variety.
Let's go back to Italy and see that Cabernet Sauvignon is grown for about 13800 ha.
It is a vine that fascinates not only me and I am convinced of this.

Non è il mio vitigno preferito, sono più da Rossi “scarichi” ed Pinot nero, sangiovese, Nerello M … comunque se ben vinificato e ben affinato con un corretto uso del legno può dare sicuramente prodotti interessanti in territorio vocato

Sono d’accordo in quanto non è un vitigno semplice trattato singolarmente, comunque con l’utilizzato adeguato delle temperature e con i tempi di macerazione giusti abbiamo la possibilità di ottenere dei vini freschi ed equilibrati con tempi d’affinamento brevi( spesso molto eleganti).
Il nostro C.Sauvignon viene lavorato nella fase iniziale in criomacerazione e ci permette di creare una base molto elegante già a distanza di un anno.
In taglio andiamo ad ottimizzare un lavoro già molto buono nella sua base.
Sicuramente hai avuto modo di assaggiare il nostro “Scutum” e credo che tu abbia apprezzato molto la sua trama tannica.
