PRODUCTION TECHNIQUE

CONTINUOUS Rosé Spumante is obtained from rosé vinification of two different harvests, from the pressing of Merlot and Petit Verdot grapes with subsequent second fermentation in autoclave following the long charmat technique. The harvest is carried out at the end of September, the grapes are harvested in boxes with a careful selection by hand. The tasting of the grapes and the analytical values allow us to choose the best harvest period to bring an excellent sparkling wine to the cellar.
The grapes are transported to the cellar and destemmed, then through a soft pressing the pink must is obtained ready for fermentation. After a possible clarification depending on the condition of turbidity of the must, the fermentation process is triggered and it will take about 15 days at a temperature between 16/18 degrees. After a period of rest on the lees, the wine is ready for the second fermentation in an autoclave for about 120 days with a subsequent stay on the yeasts before bottling.

ORGANOLEPTIC CHARACTERISTICS

The color of this sparkling wine is an intense and brilliant rose petal; the nose is delicate and elegant with notes of red currant, wild strawberries, raspberry and pink grapefruit. The effervescence is fine and persistent. In the mouth it is very pleasant, excellent sapidity balanced with the alcohol component.
It turns out to be an excellent product for the whole meal and an elegant companion for a perfect aperitif.
