Spumante Rosè CONTINUO is obtained from the rosé vinification of two different harvests, from the pressing of Merlot x Petit Verdot grapes with subsequent second fermentation in an autoclave following the long charmat technique. The harvest takes place at the end of September, the grapes are collected in boxes with a careful selection by hand. The tasting of the grapes and the analytical values allow us to choose the best harvest period to bring an optimal sparkling base to the cellar. The grapes are transported to the cellar and destemmed, then the rosé must is obtained through a soft pressing, ready for fermentation. After a possible clarification depending on the turbidity conditions of the must, the fermentation process is triggered which will take place in about 20/25 days at a temperature between 15/17 degrees.
After a period of rest on the lees, the wine is ready for the second fermentation and for the maintenance in the autoclave (in contact with the lysis of the yeasts).
We are going to assemble two "sparkling wines" from two different vintages.
A vintage has a retention on the lees of about 12 months while the following year just 4 months.
ORGANOLEPTIC CHARACTERISTICS
The color of this sparkling wine is an intense and brilliant rose petal; the nose is delicate and elegant with notes of cherry, wild strawberries, orange peel. The effervescence is fine and persistent. In the mouth it is very pleasant, excellent sapidity in balance with the alcoholic component, with a mineral final note that recalls the drink. It turns out to be an excellent product for the whole meal and an elegant companion for a perfect aperitif. We aim to obtain a fresh and fruity sparkling wine but with marked evolutionary characteristics that make it increasingly interesting and harmonious.
