{"id":3644,"date":"2022-03-11T09:00:00","date_gmt":"2022-03-11T08:00:00","guid":{"rendered":"https:\/\/www.tenutalamacchia.com\/?p=3644"},"modified":"2022-03-15T11:38:27","modified_gmt":"2022-03-15T10:38:27","slug":"vendemmia-manuale-e-ricerca-della-qualita","status":"publish","type":"post","link":"https:\/\/www.tenutalamacchia.com\/en\/vendemmia-manuale-e-ricerca-della-qualita\/","title":{"rendered":"MANUAL HARVEST"},"content":{"rendered":"<p>There<strong> pursuit of quality<\/strong> prevents the mechanization of the harvest, especially in some denominations, therefore it is preferred to resort to <strong>manual harvest<\/strong>.<\/p>\n<p>I <strong>grape harvesters<\/strong>, without the aid of mechanical tools, <strong>they cut the bunches of grapes<\/strong>, there <strong>collect<\/strong> in specific <strong>containers<\/strong> and carry them to the cellar, <strong>relying on<\/strong> exclusively to <strong>precision<\/strong> and to <strong>delicacy<\/strong> of theirs <strong>hands<\/strong> and the strength of their arms.<\/p>\n<p>This is the <strong>oldest harvesting technique<\/strong>, used since the dawn but still very widespread in the selection cellars.<\/p>\n<p>There <strong>manual harvest<\/strong>, despite present gods <strong>higher costs<\/strong> compared to the mechanical one, it allows one <strong>better selectivity<\/strong>. Practical example, it concerns the search for the <strong>noble rot or molds<\/strong>, since the<strong> mechanical grape harvester not<\/strong> would be able to <strong>select and discriminate the grapes<\/strong> which have reached a moldy stage.<\/p>\n<p>Furthermore, the <strong>manual harvest preserves the integrity of the grape<\/strong>, reducing the risk of dangerous breakage of the berries, with consequent leakage of the must, e <strong>protecting the grapes from dangerous oxidative phenomena<\/strong> which would compromise the quality of the wine. All this depends on the capacity, precision and sensitivity of the grape harvester.<\/p>\n<p>From an oenological point of view, the <strong>grapes must arrive whole at the cellar<\/strong> and the container with which they are transported must be able to preserve the physical and biochemical state that the grapes present at harvest.
