{"id":1901,"date":"2020-10-02T08:30:09","date_gmt":"2020-10-02T06:30:09","guid":{"rendered":"https:\/\/www.tenutalamacchia.com\/?p=1901"},"modified":"2022-02-07T12:15:02","modified_gmt":"2022-02-07T11:15:02","slug":"da-che-cosa-dipende-la-maturazione-polifenolica","status":"publish","type":"post","link":"https:\/\/www.tenutalamacchia.com\/en\/da-che-cosa-dipende-la-maturazione-polifenolica\/","title":{"rendered":"WHAT DOES POLYPHENOL MATURATION DEPEND ON?"},"content":{"rendered":"<p>We have seen in a previous article the importance for a winemaker to harvest, especially in the production of quality red wines, grapes that have a <strong>optimal polyphenolic maturity<\/strong>, evaluating the peel and pips very well.<\/p>\n<p><strong>But why can even 24 hours be important?<\/strong><\/p>\n<p>At the biochemical level, many synthesis and polymerization reactions take place which from day to day allow us to have small but important changes.<\/p>\n<p>&nbsp;<\/p>\n<h3>What does polyphenolic ripening depend on?<\/h3>\n<p>Why are red grapes harvested when average temperatures are lower?<br \/>\nWhy have we heard of thermal shock?<\/p>\n<p>Let&#039;s see if these are all important factors for the winemaker.<\/p>\n<p>I have tried to summarize all the factors that play a fundamental role in <strong>polyphenolic quality of our grapes<\/strong> and consequently <strong>of our wine<\/strong>.<\/p>\n<p>Depend on:<\/p>\n<p><em>\u2022 Correct mineral nutrition<\/em><br \/>\n<em>\u2022 Limited vegetative vigor<\/em><br \/>\n<em>\u2022 Grape weight of the low strain<\/em><br \/>\n<em>\u2022 Respect the leaf surface ratio of 1-1.5 m2 per kg of grapes<\/em><br \/>\n<em>\u2022 Terroir and obviously form of breeding<\/em><br \/>\n<em>\u2022 Average daily temperature close to 20 \u00b0 during the ripening process (ie the period from veraison to harvest)<\/em><br \/>\n<em>\u2022 Minimum day \/ night temperature difference of 8\/10 \u00b0 C or higher<\/em><br \/>\n<em>\u2022 Water stress<\/em><\/p>\n<p><strong>Nature plays a fundamental role and the vintage of a wine is the daughter of many factors.<\/strong><\/p>\n<p>And we&#039;re only talking about polyphenols.<\/p>","protected":false},"excerpt":{"rendered":"<p>We have seen in a previous article the importance for a winemaker to harvest, especially in the production of quality red wines, grapes that have an optimal polyphenolic maturity, evaluating the skin and seeds very well.
